No. 171

history

Victorinox produced the model series of the so-called "baker's knives", the No. 171 and No. 172, since the 1920s. In the catalogs they do not appear under the pocket knives, but under the kitchen knives/kitchen tools.

Model no. 171 differs from model no. 172 only in that the scales are slightly curved and the foot rivet was not mounted in the middle but on the side.

These baker's knives have undergone relatively little change throughout hihistory. Originally the cutting blade was smooth. Later this was provided with a perforation. Aluminum was mainly used as the scale material, originally in natural, later anodized in color. A company name was very often stamped on the scales, usually the company that used the knives. These baker's knives were probably never intended for end customers, but rather as utility knives for companies. The blade was originally used to cut open sacks of flour. Due to the special shape of the scale and the shape of the blade, the cutting blade can be easily opened even with gloves. The company embossing on the bowls shows that these knives were not only used for flour sacks, but also in other areas of the food industry, probably wherever large sacks had to be cut open.

Baker's knife no. 171 is still in production today. It is still often used for advertising purposes. Officially, only variants with the serrated edge have been offered for many years.

construction

Model No. 171 is very simple in construction. It comes with 7 components; 3 rivets, 2 scales, the cutting blade and the back spring. The head rivet fixes the cutting blade, the center rivet fixes the back spring. The foot rivet does not go through the back spring, but above it and also fixes the scales. This foot rivet is visible from the inside when the pocket knife is open.

Smooth and anodized aluminum and steel were used as the scale material.

Liners/spacers/rivets

Model No.171 had no sinkers and liners. The rivets were made of brass or nickel silver.
